Ingredients:

• 250 g self-raising flour
• 350 g demerera sugar
• 75 g cocoa powder
• 1 tsp salt
• 125 mL vegetable oil
• 125 g apple puree (I blend apple sauce from a jar until smooth)
• 250 mL cold water
• 2 tsp vanilla extact (I just slosh some in)
• 50 g dark chocolate
• A handful of chopped walnuts

Method:

1. Preheat the oven to 180 degrees celsius. Grease and line a 22 x 33 cm pan
2. Combine the flour, sugar, cocoa and salt. Then mix in the chocolate and nuts.
3. Measure the oil in a jug then add the apple up to the 250 mL level. Make up to 500 mL with cold water. Add the vanilla and whisk together.
4. Add the wet ingredients to the dry and mix well until all combined. Pour into the pan.
5. Bake for 30 minutes or until a skewer comes out clean. Let cool a bit before removing from the tin.
